  • 8 chicken thighs
  • 1 lemon, zested and juiced
  • ¼ cup olive oil
  • 1 tablespoon grated garlic
  • 3 sprigs fresh parsley
  • ½ teaspoon salt

  1. In a big zip-top bag, combine lemon zest and one tablespoon of lemon juice; save the remaining lemon juice for later use. Combine the olive oil, garlic, parsley, and salt in a mixing bowl. Add the chicken thighs to the bag, bathe them with the marinade, push out any extra air, and close it.
  2. 1 hour to overnight in the refrigerator to marinate
  3. Preheat an outside grill over medium-high heat and brush the grate liberally with oil.
  4. Shake off any excess marinade from the chicken. Remove the leftover marinade and toss it out.
  5. Cook, rotating once, until the chicken is no longer pink at the bone and the juices run clear, 8 to 9 minutes each side over a hot grill. A thermometer put near the bone should register 165 degrees Fahrenheit (74 degrees C).
  6. Allow 10 minutes for resting after removing from the grill.
