  • 1.5 pounds Cauliflower
  • 6 slices Bacon
  • ⅓ cup Scallions thinly sliced
  • ¾ cup Low Carb Mayonnaise
  • 2 tablespoons Wholegrain Mustard
  • ½ teaspoon Salt
  • ½ teaspoon Pepper ground

Keto Cream & Healthy Potato Salad Alternative (Cauliflower) Recipe Instructions

  1. First, cut the cauliflower into bite-sized pieces.
  2. Bring a large pot of water to a rolling boil over high heat.
  3. Cook for 4-7 minutes, or until cauliflower is tender, then drain thoroughly. Allow chilling in the refrigerator.
  4. Cook the bacon in a large frying pan over high heat while the cauliflower cools. Cook until crispy, then cool before chopping or crumbling.
  5. Mix the mayonnaise, mustard, salt, and pepper in a small bowl and set to the side.
  6. Pour the dressing over the chilled cauliflower, bacon, and scallions in a large mixing bowl. Mix thoroughly.
  7. To help the flavors merge, chill for 30 minutes before serving.
