Keto Zucchini Noodles with Avocado Sauce Recipe Ingredients

  • 3 or 4 large Zucchini spiralized
  • 3 cloves Garlic crushed
  • 1 avocado
  • ⅓ cup Cilantro torn
  • ¼ cup Olive Oil
  • 1 tablespoon Lemon Juice
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper ground
  • Water as needed
  • Cilantro to serve

Keto Zucchini Noodles with Avocado Sauce Recipe Instructions

  1. Place the spiralized zucchini on a tray lined with paper towel and set aside.
  2. In your food processor, add the avocado flesh, cilantro, half the oil, lemon juice, salt, and pepper. Blend to a smooth puree, add water until the sauce is of pouring consistency.
  3. Place a large nonstick frying pan over high heat and add the remaining oil. Add the zucchini noodles and saute for 2-3 minutes, until tender.
  4. Remove from the heat and pour over the avocado sauce.
  5. Gently toss together and serve sprinkled with extra cilantro, and parmesan cheese, if desired.
