The Best Keto-friendly Slow Cooker Recipes for Fall

The keto diet focuses on eating low carbs and high fats to lose weight. However, many people struggle to find recipes that follow this diet plan.

Crack Chicken

Crack chicken is a versatile entree that follows the keto diet. This chicken can be eaten alone or in a sandwich. You can also pair this chicken with various sides. 

Ingredients:

  • ½ cup chicken broth (low sodium)
  • 1 tbsp. dried parsley
  • 2 tsp. dried dill
  • 1 tsp. dried chives
  • ¼ tsp. garlic powder
  • ½ tsp. onion powder
  • 2 pounds boneless, skinless chicken breasts
  • 2 blocks of cream cheese (cubed)
  • 2 ¼ cup shredded cheddar cheese
  • 8 slices of cooked bacon (crumbled)
  • Salt and pepper to taste
  • Chopped chives

Directions:

  1. Pour chicken broth into the slow cooker. 
  2. Stir in dried parsley, dill, chives, onion powder, and garlic powder. 
  3. Add chicken and season with salt and pepper. 
  4. Stir to coat all chicken. 
  5. Set on high for two hours or low for six hours. 
  6. Once cooked, shred the chicken with two forks in the slow cooker. 
  7. Stir in cream cheese and cheddar cheese.
  8. Top with bacon and chives before serving. 

Salmon 

Salmon is a fatty fish that is great for those following the ketogenic diet. This fish entree is a fresh meal that is perfect for summer days. You can pair salmon with vegetables, potatoes, or rolls. 

Ingredients:

  • 1-2 pound salmon fillet (skin on)
  • 1 lemon (cut into rounds)
  • 1 ½  cup vegetable broth (low sodium)
  • Juice of ½ lemon
  • 2 tbsp. fresh dill (chopped)
  • Salt and pepper to taste

Directions:

  1. Line the slow cooker with parchment paper. 
  2. Layer lemon slices on the bottom of the slow cooker and lay the salmon on top. 
  3. Season salmon with salt and pepper. 
  4. Add the broth and lemon juice. 
  5. Top the salmon with additional lemon slices. 
  6. Cook on low for two hours until salmon is opaque and flaky. 

Thai Zucchini Lasagna

Thai zucchini lasagna is a unique take on this popular pasta dish. The Thai spices will bring savory flavors to the lasagna. These noodles also bring a lightness to the dish, allowing you to avoid overstuffing. 

Ingredients:

  • 4 large zucchinis
  • 1 tbsp. salt
  • 2 tbsp. coconut oil
  • 1 pound ground turkey (extra lean)
  • 1 cup onion (diced)
  • 2 tbsp garlic (minced)
  • ½ tbsp. ginger
  • 1 cup coconut milk
  • ¼ cup creamy peanut butter
  • ¼ cup soy sauce (reduced sodium)
  • 2 tbsp. coconut sugar
  • 1 tbsp. rice vinegar
  • 1 tbsp. lime juice
  • 1 tbsp. fish sauce
  • 1 tbsp. sriracha
  • 15 oz. ricotta cheese
  • 1 egg
  • ½ cup cilantro
  • 2 cups Nappa cabbage
  • ½ cup water chestnuts
  • 8 oz. mozzarella cheese
  • 1 red pepper (diced)
  • Pepper to taste

Directions:

  1. Preheat the oven to 350ºF. 
  2. Slice the zucchinis into 1/8 inch thick noodles.
  3. Lay slices flat on a cookie sheet and sprinkle with salt. 
  4. Bake noodles for 20 minutes, until lightly browned. 
  5. Heat coconut oil over high heat in a large pan. 
  6. Add ground turkey, onion, garlic, ginger, and pepper to the pan—Cook for about 12 minutes.
  7. Once thoroughly cooked, add coconut milk, peanut butter, soy sauce, coconut sugar, rice vinegar, lime juice, fish sauce, and sriracha. 
  8. Boil mixture for three minutes, stirring often. 
  9. Once noodles are cooked, you must dry them with paper towels to remove excess moisture. 
  10. Mix the ricotta, cheese, egg, and pepper in a separate bowl. 
  11. Spray the slow cooker with cooking spray to avoid sticking. 
  12. Spread half the turkey mixture on the bottom of the slow cooker. 
  13. Layer zucchini noodles in a single layer over the turkey. 
  14. Spread half of the ricotta mixture over the noodles evenly. 
  15. Sprinkle half of the cilantro, cabbage, water chestnuts, and mozzarella on top of the ricotta.
  16. Repeat the layers one more time. 
  17. Cook on low for five hours, until everything is melted and browned. 

Pork Carnitas

Pork carnitas is a popular Mexican dish that can be enjoyed with tacos, tostadas, or nachos. You can customize this recipe by changing the spice level to your preference. 

Ingredients:

  • 1 tbsp. olive oil 
  • 1 4-pound pork shoulder/butt (fat trimmed)
  • 1 lime juice
  • 5 cloves garlic (minced)
  • 1 medium onion (chopped)
  • 1 (4 oz.) can of diced green chiles
  • 1 cup chicken broth
  • 3 bay leaves
  • 1 tbsp. chipotle chili powder
  • 1 tsp. pepper
  • 1 tsp. salt
  • 1 tsp. chili powder
  • 2 tsp. cumin
  • 2 tsp. oregano

Directions:

  1. Heat oil in a large pan over high heat. 
  2. Sear each side of the pork until browned. 
  3. Transfer the pork to the slow cooker and add the remaining ingredients. 
  4. Cook on high for five hours or on low for eight hours. 
  5. Remove the meat from the slow cooker and shred it with forks. 
  6. Transfer shredded pork back into the slow cooker to absorb juices. 

Chicken Fajitas

This chicken fajita recipe is a quick and easy option. You can enjoy these fajitas with guacamole, beans, or queso. 

Ingredients:

  • 4 boneless, skinless chicken breasts 
  • 2 tsp. cumin
  • ½ tsp. garlic powder
  • 1 tsp. chili powder
  • ½ tsp. red pepper flakes
  • 3 bell peppers (sliced)
  • 1 onion (sliced)
  • 1 can diced tomatoes (drained)
  • Salt and pepper to taste

Directions:

  1. Place all chicken into the slow cooker.
  2. Season with cumin, garlic powder, chili powder, red pepper flakes, salt, and pepper.
  3. Top with bell peppers, onions, and diced tomatoes.
  4. Cook on low for six hours until chicken is thoroughly cooked.
  5. Remove chicken and slice into strips.
  6. Drain excess juice and serve on tortillas.
